Cellular differentiation is where different cells take up different specialized roles. By having different types of cells that can do different jobs, they can help a complex organism carry out a huge variety of tasks while saving energy. For example, red blood cells carry oxygen while white blood cells gobble up pathogens. If every cell in the body were responsible for carrying out of the organism's required tasks, each cell would need a tremendous amount of energy to be able to do all of these things. Kind of like division of labor, cellular differentiation lets the cells carry out a number of different tasks all at the same time and very efficiently.
