Animals adapt to many different things and for many different reasons. They mostly adapt to the environment or they adapt physically.

Animals can also adapt to different environments by natural selection, a process in which only the strongest animals can survive. Then, those who have survived can mate. This helps them adapt.

EDIT:

They would also adapt by having thick fur if they live in the arctic or having something to live without water for a longtime if they live in the desert.

They adapt to their environment with different characteristics like how the dog gets his winter coat in the wintertime and sheds the winter coat in summertime. The adaptations to a environment from an animal are not learned behaviors but they are inherited traits.

Behavioral adaptations are learned through experience. Physical adaptations are the result of the animals' interactions with the environment.

One interesting example of 'physical adaptation' is the feral horses of North America that escaped from European explorers in the early 1500s. Some of those horses 'migrated' to higher ground in colder regions. They developed shorter forelegs than hind legs, heavier bodies, and thicker coats. The horses that 'migrated' to desert regions are leaner, with sparser hair. The horses that moved to the plains regions have developed longer legs for covering more ground, more quickly.

Different animals adapt to different ecosystems in different ways (as Charles Darwin discovered). The example that he found was when he visited the Galapagos Islands and he noticed that the finches had different sized beaks on different islands because they were eating different varieties of seeds and fruits eg. the smaller beaked birds ate the small nuts etc. and the bigger beaked birds at the bigger nuts with shells etc. Similarly on one island the tortoises were smaller and had adapted to the islands small holes etc. but bigger tortoises had adapted to living in the open, without shelter.
