People use bacteria to create cheese and yogurt from milk.Acidophilus is used in yogurt. Rennet is used to separate milksolids{curds } from liquid{whey] Then the curds are combed and pressed together to form cheese. Some have bacteria added for flavors and textures, some are just aged and bacteria occur naturally. Some wheels of cheese are dipped in wax and some are allowed to develop natural rinds by hardening or even allowing mold to grow on them,like Roquefort,Stilton or Bleu. Some are only considered ready to eat or "ripe" when completely moldy on the outside and soft, even runny on the inside.
