Some have skin that go with with they're surroundings, but if others, or those that have camouflage are seen, they squirt they're ink and swim away without being seen because the water would be black, like a black out!
many people would say that they will camouflage into their surroundings, but after my experience with chameleons, i have found that nearly all colour-changing organisms do so purely based on their mood and emotions as opposed to a disguise. depending on the species, it will change colour based on it's mood, whether it is content, frightened, angry etc.

Most of the time an octopus will just hide from his enemies. He has excellent camouflage, due to colour-changing cells in the epidermis. In some cases these cells aren't used as camouflage, but as a warning that the octopus is a venomous species. In the rare case that an octopus is discovered by a predator, he will spray ink as a distraction and quickly swim away ( they are very fast!).
