Some rocks grow and caves are one of the few places you can see it happen. Of course, rocks do not grow like you do and they get bigger over thousands of years. You could watch all day and not see any growth.
Igneous

The initial stage of rock development is the formation of separate minerals. The formation of a mineral is known as nucleation where the elements of a mineral began to bond together forming a tiny seed mineral. Once the seed has reached a certain size the elements will readily bond and grow the mineral larger. The trick is that the mineral nucleus must overcome an energy state that is higher than the bonds the elements have in the mineral seed, which isn't fully understood yet.
Sedimentary
As rocks are weathered and erode they travel to an area of low energy befitting there size, density and environment, as more sediment is deposited the rocks below began to become consolidated and lithified.
Metamorphic.
similar to Igneous except it is often in a semi solid semi molten state allowing migration of elements to areas of similar energy states. often causes a transformation of the mineralogy due to different pressure temperature environments it is subjected to.
