We do tests on it. We find out the average time a particular food can be stored and we place a time before that of the expirery. it also helps foods to be stored in special liquids or gases to make them last longer. some foods may not need an expiry data as they will go off much longer after we are dead. In these cases a best before date will be provided as a key to the best time before to eat it. They are still edible but are past their ripe age.
Somewhere on the box, can, jar or wrapper there will be a date. It will either say sell by or use by, then a number. If it says sell by, you can probably use the product a few days after the date. If it says use by then it will be bad after that date. Also, if it says best if used by, it is okay to eat it past the date but it will taste better before.
