It depends on what animal you are talking about. Sheep, goats, cattle and pigs are usually done without anaesthesia. In pigs (with boars) most are castrated via knife and emasculator. In rams, billies and bulls there is two main options: banding or cutting. Banding simply uses a rubber O-ring band that is positioned above the testicles on the "neck" of the testes where the spermatic cord and blood vessels are located. The testes simply fall off after a while. Cutting involves using a knife to slit open the scrotum exposing the testes, and using the emasculator to crush the blood vessels and spermatic cord to speed the healing process. The emasculator kinda acts as a knife itself because it both crushes the cord and enables the person to separate the testes from the cord. Another method is to cut the cord with the knife and tie the blood vessels and cord in a knot to stop blood flow. Most vets though prefer to use the knife and emasculator method, or for young, the banding method.
With horses, anaesthesia is necessary. The knife and emasculator method is the more common and best method to use to geld or castrate stallions, as described above.
