If you need to replace the bulbs, they are easy - just unscrew and replace.
In order to replace the HEADLIGHT ASSEMBLY (bulb and housing) you will have to remove the grille (look for 3 small screws to undo) and then you should be able to pull out the headlight by pulling the bottom first, then the top.
No 3 screws just one on the top of the light remove it, it is a very long screw!
Then just pull straight out from the bottom it has three insert screw things that hold it in place but they are more like tabs that are being held in by a plastic holder. No need to remove 3 screws, grand Cherokee year 2000 .
The related link discusses all lights in the Jeep Grand Cherokee from the WJ model years (1999-2004, inclusive) and includes pictures and diagrams on how to access them so that bulb changes can be made:
Remove the two scres that hold in the headlight. One is found on top and is called the jackscrew. The second is on the outside near the turnsignal. Once they are take out, slide the headlight out and put a cloth down to protect the lens, you can access the bulds that need to be changed. Don't touch the bulbs with your fingers because the oils from your fingers will cause the bulbs to explode. Once they are in, put the headlight back into the opening and put the screws back in.
There is a bulb that plugs into a socket dirctly behind the headlight. In order to access it you must lift the hood. Next, you will have to remove the plastic ring that holds the socket in the rear of the headlight housing. Twist the ring CCW (if you are facing the front of the vehicle)until it becomes loose and pull the socket and bulb through the hole. Then using a small flat tipped screwdriver lift out the little tab that holds the lightbulb on the socket and pull the bulb straight out from the socket. {Note: Pay Close Attention to the direction the plastic ring came out from, it is a pain to get back on if you don't. It will only go on one way...to hold the socket in place}
The bulb must first be disconnected from the plug attached to its back. The plug has two tangs on top that must be lifted up just a bit (I use a small screw driver to slip beneath the tangs and apply a little upward pressure while pulling on the plug at the same time). Once the bulb is disconneted from the plug you must rotate the plastic ring that surronds the bulb and is attached to the headlight assembly counterclockwise until it comes off. Once the ring is off you just pull the bulb out the back. Too install the new bulb just reverse the process above.
Hi, Page 297 of the owners manual for a 2000 Jeep Grand Cherokee says to remove the screw at the top of the headlight assembly, then pull the entire headlight assembly out. The low beams are the two outer beams that have a reflector covering the light. The high beams are the inner bulbs. Pull the electrical connection off the back of the bulb to be replaced, twist the back 1/4 turn to the left and remove, then pull the bulb and reverse these steps to put it back together. Steve

It's been awhile since i changed mine, but if I remember I used a phillips head screw driver and removed the 4 screws holding the small metal frame around the headlight bulb. After that the bulb should just pull straight out and you unhook the power connector. Install in reverse. Make sure to replace both bulbs at once.
