To prevent a joint of beef from drying-out while it is cooking it is a good idea to add 3/4 of a cup of water to the crock pot at the start,this causes steam to rise while it is cooking and keeps the meat moist,the juices can be used for a gravy at the end ,this method works for all joints of meat that require longer cooking time too. Adding liquid is the answer to keeping a roast from drying out in a crock pot, rather than water, I would suggest a beef broth rather than plain water. Plain water adds only liquid. Broth add additional flavor.

Put the potatoes at the bottom of the pot, place the roast on top of the potatoes, pour a can of cream of mushroom soup over the roast, sprinkle some garlic powder, onion powder, and salt and pepper on top of the soup, put the lid on, turn the crockpot to low and let it cook for about 8 hours.

Put your vegetables (carrots, onions and potatoes, any that you choose really) on the bottom of the slow cooker. Season the meat to your liking or as the receipt instructs then put that on top of the vegetables. Add in your broth, any sauces you want and then turn on the slow cooker. It's best to cook on a low heat for around 10 hours, but if you have less time cook on medium or high. If you are following a recipe, it should have recommended cooking times.

Seal tightly with foil and bake at 300 degrees F for 1 to 2 hours, depending on the size of the roast, until it is fork tender or the internal temperature is 160 degrees F for medium cooked, or above 160 degrees F for well done. Slow cooked, covered meat is always moist and tender.

You can also cook your roast uncovered in water. However, you may need to baste the meat occasionally. Just ladle the liquid the roast is cooking in over the entire roast.

Another way is to wrap the roast tightly in foil with just a little added water. Let the roast cook slowly for several hours in its own juices, depending on its size, at a low temperature, until the internal temperature is 160 degrees or above and it is tender. The longer you cook it, the more tender it will be. An example for a time frame is: a very large roast, wrapped in foil with water, cooked at 150 degrees F may need to cook for 6 to 8 hours.
