I didn't have a can of beer handy when I attempted to cook this so I used a can of soda which exploded causing a grease fire which proceeded to burn my house down. Now my family is homeless. I guess the chicken was pretty juicy, though. 3 stars...

The beer you like to drink! If you like hops, the stronger hoppy beers such as an Ale or IPA will lend that floral note to the chicken. Stronger stouts and porters will add notes of malt into the meat. Most American lagers will add a slight note to the flavor, but primarily will simply keep the meat moist. Wheat beers will add a more fruity note to the flavors.

One opinion is if the beer is available in a can, it isn't good for beer can chicken! Pour it out on your lawn and then pour a good bottle of beer into the can.

Stronger flavored beers such as the stouts and porters will provide a better mix with smokey flavors, particularly if you are using mesquite or similar woods to smoke the chicken.

Beer can chicken

cut the top off of the can with a can opener and pour some out so there is only a little over half a can left. Add 2-3 tablespoons of the dry rub into the can that you plan on using in the bird. (When I make beer can chicken i love to use mesquite rub)

Rinse your whole bird and pat dry.

Rub olive oil over the whole bird then put your dry rub over that.

Next separate the skin a bit and rub some dry rub under the skin and put some on the inside of the bird.

Even if you put dry rub on the outside it is important to put it under the skin and inside the bird because the skin is so thick that the flavor cannot get through.

You can find a holder made for beer can chicken/turkey for 5 bucks at the store or you can can just prop up the chicken with the legs. Just put the can in the bottom of the bird and prop it up on the legs.

If you have a potato handy whittle it down so it will plug the whole in the neck so the flavor doesnt escape through the neck.

If you are using charcoal do not put the charcoal directly under the chicken. Line the sides of the grill so that there is equal heat on all sides. The last time i cooked a 5lb chicken it took about 2 hours, but with charcoal its going to be different every time. The temperature of the chicken needs to be between 170 and 180 degrees F. Measure the temp at the thickest part of thigh without touching the bone.

On a gas grill the temperature of the grill needs to be about 300 degrees.

You can cook a beer can chicken on your grill or in the oven. It's a versatile approach that's a winner year round. For this process, you'll need a whole chicken, a can of beer (dark beer if possible), a meat thermometer, and a rub recipe or mixture you like. If you just want to add a little flavor, some powdered garlic, onion and pepper will work as a down and not-so-dirty rub.

Prepping a Beer Can Chicken

Clean the bird and pat it dry. Apply the rub to the interior, exterior and under the skin of the bird. The more rub, the better. You'll see some recipes that call for a cup of dry rub for one chicken. Even if you cut that in half, it's a lot of spice. Apply half of the spices to the bird and reserve the rest. If the mixture isn't sticking well, slather on some oil.

Now comes the fun part. Open the can of beer and drink half -- cook's privilege, so enjoy. Run the beer can through your can opener to remove the top. (You want a large opening to let the steam escape.) Pour the rest of the spices into the beer left in the can.

Now place the beer can on your grill or in your baking pan and cover it with the chicken. Position the legs to balance the bird.

Cooking Beer Can Chicken

Recipes will vary, but you can typically cook a medium sized bird in about two hours in a 350 degree F oven. Use a meat thermometer in the thickest part of the leg to determine doneness. You want an internal temperature of around 175 degrees F (80 degrees C.). Let the bird rest for fifteen minutes before serving. If you're adding barbecue sauce, brush it on during the last ten minutes of cook time.

One very stylish way to serve this dish is to cut the bird in half after cooking. Beer can chicken is very easy to cut with poultry shears, and this style of presentation is attractive for serving small hens. It's also easy and looks impressive (especially if you have a hearty appetite).
