It's a Japanese recipe cooked at the Hibachi grill in Japanese restaurants.

Sure... but it will more then likely be over cooked. Shrimp does not take long to cook. Your shrimps texture may be a little tough. But YES, you can fry pre-cooked shrimp.
If shrimp is not cooked, it will be a grey color. If uncooked, cook until shrimp turns pink, plus one minute. If shrimp is pre-cooked, cook until it has been heated through.
That depends on what you order. Hibachi is the only Japanese food I like, and I try to order fish, chicken, and vegetable dishes - shrimp is NOT included in vegetable dishes. The fried rice that is prepared at the table contains eggs, so ask the chef to make it without eggs.
