Play a game as you normally would. Then press the x button on the controller, go one to the right and go on select music, then it starts playing music and you can press the x button to go back to the game and the music will continue whilst you play the game.

Only some, google the backwards compatibility list which shows all the current xbox games capable on the xbox 360. You can't. The game recognizes when a controller is plugged in vice a guitar. The same as Rockband/GHWT can tell the difference between the mic, drums, and guitars.
