you click on a sim that's around you and click be nice and then they will give happy essences. unless they are scary people, then they will give sad or scary. click on a happy person, like chef gino.

Once your town gets to one star and you can saw down logs, you can go into the forest, where Organic essences can be prospected in the southern area.
