Your question is a common one. Your question isn't really so much about specific exercises so much as is it is about nutrition...so that's what I will address.

Here's the basics:

When you want to build muscle you have to go into a bulking phase. You will have to up your caloric intake to somewhere around 15-20% above what is needed to maintain your body's current weight. You can expect to put on a little body fat during this time. However, you can minimize this by including 1 or 2 high intensity, low duration (10-20min) cardio sessions during your week. When you are done with your bulking phase (when you have gained the extra muscle you want) you will then reduce your caloric intake back down to normal and the fat will melt off easily with a little cardio.

I have been doing P90X and it is a great workout/diet plan. I am not telling you that you need to do P90X, but it is a good example of what you need to do/eat. Eat foods that are high in protein and low in fat such as chicken, fish, cottage cheese, tuna, lean meats. You want to stay where you are with your calorie intake just eat better. Make sure that you workout 5-6 times per week. Switch things up to confuse your muscles because they will get used to what you do regularily.

It is rather strange that many people want to achieve weight weight losses at rates that can only be realized by having a Bengal tiger eat your legs for supper! Most medically based sources (not diet companies) indicate an acceptable rate of below a kg/wk. The highest rate found was 1% of initial body weight/week.

The big secret is to not kill yourself on the route to health - your body is set up to handle the you that you are now - a lighter you will have less needs and demands and will have to shed a lot of nasties presently contained in your body fat on route to a lower weight.

A lesser secret is to make changes that you can live with over time, learning the correct way of eating comes with time until you do it as a natural thing. Most sources indicate that the "throw yourself over a cliff" type of dieting gets your weight down quick, but you bounce back up just as quick - sometimes with the collateral damage of gall stones etc.

When your losing weight also work out with weights, start out with light weight then build up. In addition, do cardio exercise to lose fat.
