To make the best peach pie, use fresh peaches and cut them into pieces (strips are the most common). You can use canned peaches instead. Mix the peaches with sugar and cornstarch, and a bit of cinnamon if you like. Make the crust using flour and shortenlng, using a pastry cutter to get it to a crumbly texture. Add water, a bit at a time, until the crumbles stick together. Roll out the crust with a rolling pin and put it into a pie pan. Cut off the excess with a knife or just pinch it off. Add the filling. Roll out the top crust and place it over the topping. Pinch off the excess and 'Flute" the edges. Sprinkle the top crust with sugar and cinnamon. Bake the pie for the specified time in the recipe.
