Making yoghurt from scratch is hard enough let alone trying to make it vegan. my best answer to this would be to use a yoghurt starter mix. a lot of recipes for making yoghurt from scratch involve using already made yoghurt as a starter. as you want this to be vegan you will have to find an alternative for this:

the rest is easy all you have to do is look up any yoghurt recipe online and substitute the starter yoghurt for the original formula and the milk for coconut milk. i would suggest overall though buying the yolife yoghurt making book (also on amazon).
do be cautious as to how vegan you want the yoghurt though as yo life starter formulae contains good bacteria. it is impossible to make yoghurt without bacteria so there will always be a living thing in yoghurt it is just down to your definition of living thing.
