Yes, you can organize your apps. To organize your apps, press and hold any app on the screen until all of the apps start to "shake", and then all of the apps can now be moved every which way you like.
Why applications shake in iPhone?
If you press and hold down on an application, they will all shake. May of them will probably have an X in the corner, tapping the X will delete the app (with a warning first). If this makes you nervous, you can set a restriction on deleting apps in Settings. Shaking the phone while the apps are shaking should shuffle your apps. And finally, to stop the apps from shaking, press the home button.
