How do you do an eighth note on the clarinet?

Eighth notes are twice as fast as quarter notes, just as 1/8 is half of 1/4. So, you can fit two eighth notes in the place of a quarter note. Just try playing quarter notes, then play twice as fast, fitting two notes in the place of 1 quarter note.

It depends which octave. For the bottom it is all your fingers down apart from the G sharp key, for next one up it is the same without your index finger of your left hand off, and for the next one, which is above the stave you put down all your fingers including the G sharp key. This is just the fingerings; In order to get the sound out and make a good tone you need to ask your teacher or someone about technique.

You are probably referring to the note one octave above the lowest note, so if the recorder is tuned to C, this would be the next C up. If that is the case, the fingers covering holes are the thumb and middle finger of the left hand - in other words, the hole on the back of the recorder, and the hole next below the top one on the front are covered. But you should really get a fingering chart, which is usually supplied with the instrument. One such chart is given at the link below.
