You need to wrap the chicken breast in wax paper and pound it thin. You can use a can of veggies to pound it, or use the flat side of a meat mallet. Then you take whatever you want to stuff it with and put it on one side of the chicken. Roll it up and bake it. You can mix Stovetop stuffing with some veggies and butter to put inside the chicken, then use a can of cream of chicken soup to pour over the rolled chicken breast while you bake it in a 9x13 in. dish. You can bake it on 350 for an hour, or 425-450 for 30 minutes or until the chicken looks done to you. The chicken is done when it reaches 170 degrees, but I always just check to make sure that the meat is white.

Assuming you mean a boneless breast as opposed to a whole turkey or a "hotel" turkey (which is a whole turkey without the legs).

-Prepare your stuffing.

-Place the breast meat on the cutting board skin side up.

-With a sharp knife horizontally (parallel to the cutting board) slice the breast, at about half way up, to within about 1 inch of the opposite edge, and open the breast up. This is called butterflying.

- Lightly salt the opening you made in the breast.

- Place the stuffing on 1/2 the butterflied breast and fold the other half over the top of it.

- If needed the breast can be tied with roasting string or trussing picks(skewers).

- put a few pats of butter under the skin.

- in a small roasting pan or dutch oven with about 1/2" (1 cm) of water in it, place the breast on a roasting rack, skin side up, and cover it.

- Roast the breast as you would any other meat, basting for the last 15-20 minutes.

For a "hotel" breast you still have a cavity you can salt and stuff the way you would a whole bird, so butterflying is unnecessary.

Be sure to cook until at least 65C for both the chicken and stuffing. Cut a small pocket into the meaty part of the chicken breast and then stuff it with desired cheese and crisp fried bacon.
