Evacuate the refrigerate, remove the belt, disconnect the AC lines with fuel line separators, unbolt the compressor.
Standard is 22 gallons.
It should be on your door jamb sticker.

It does not take freon. The 1995 GMC Vandura uses the new R134a.
I bought a set of GMC shop manuals off ebay for $40. It comes with the fuel system book, wiring diagrams, light duty trucks and vandura and rally book. They have saved me on a lot of labor $$$ having them.
