I'm assuming you have the 1.9L engine here. You want to drain the coolant, and remove the upper radiator hose. The spot where the upper radiator hose goes to the engine is where the thermostat is housed. It will be a pain to get to some of the bolts. (3 bolts probably) You may want to remove the coil pack retaining bracket thingie first, directly above the thermostat. Then access should be easier. Make sure you note the direction the thermostat faces before removing the original one. I also suggest replacing the bolts on the thermostat housing after you remove them, cause I've had em break on me and tapping them out is no fun. Make sure you use a new gasket, and sealer. Also, be careful because both gasket mating surfaces are likely aluminum and will scratch easily when cleaning off the old gasket material.

If this is a 2.8 V6 the thermostat is located on the front of the engine. Ask 'Where is the thermostat located on a 1995 Audi A6?' on this site and you'll find someone has done a great job of explaining how to find and replace the thermostat.
