There are many ways to do this.
1.Beat a castle or tower you have not beaten before
2.Beat the game
3.Spend 5 Star Coins at a sign
4.Beaten the game already? Pause on the level selection screen(press start) and select"save". This will only appear AFTER you beat the game.
There are blocks with the the letter "S" printed on them. They are seen throughout the game. Go under them and hit the "A" button on your controller and Mario will jump, hitting the block. You will be asked if you want to save your progress. Select "Yes" and the game will save your progress.
In every Paper Mario game there is a block that has a "S" on it, jump and hit it and it will ask you to save, and if you quit or die you will start back at that save point.
If you're playing it on a Game Boy, you can't save. But if you download it from the Nintendo e shop on 3ds you can.

In Super Mario World 2: Yoshi's Island, The game autosaves after you finish a level.
On the original hardware, you can't. But through emulation, you can.
In new super Mario bros. Wii to save it you have to exit the level your on and when it shows the level map you click + and where it says quick save you click it and the game is saved.
You have to complete a Castle or buy something with your Starcoins to save. i no its pretty rubbish x ;)
