Depending on the context, you would usually use "Yo soy". "Yo soy un hombre".

"I am a man".

Soy is used for permanent things, such as "I am a man". For temporary things, we would use the word "Estoy".

"Yo estoy en España para vacacion"

"I am in Spain for holiday"

Since you will not be on holiday forever, "estoy" is used.

Soy - I am (permanent state of being) I am funny/happy by nature.

Estoy - I am (location, or temporary state of being)

I am at home, I am happy (at the moment)
