when i prepare cantaloupe i usually flatten one end so as to present a stable surface (just a little from the stem end). Then i will cut it in half. remove the seeds. Then i will get it into say 6ths or 8ths. so you have your traditional melon wedges. then you trim the rind (could call it skin) from the wedges. Then you cut it into whatever shape you would like.
I cut it in half, then scoop out the crap. Then cut each half in half so that they're really fat crescents. Then I cut each fat crescent into 3 equal crescent strips, resulting in 12 of them from the whole cantalope.
You could then cut the peel off and cut it into pieces, but I usually just eat it off the peel kind of like you do with a watermelon.
Cantaloupe, Honeydew, and similar melons have all of their seeds in the center, which makes them easy to prepare. Once a melon is slightly soft to the touch, and fragrant, you can slice and serve it. Halve the melon and remove the seeds and stringy cords from the center. Slice into crescents, or cube, or make melon balls.
An important point is that the flesh nearest the skin may be bitter, while the sweetest and softest parts are near the center. If you are cubing the melon, do not slice too close to the skin.
Cantaloupes (also called Indiana melons and other regional names) can be eaten raw - simply peel the hard brown-green rind off, scrape the seeds out of the middle and eat the orange flesh that is left.
