Most sharks really don't need to "defend" themselves as they are pretty much at the top of the food chain. Sould something challenge that fact they would depend themselves by quickly swimming away or biting with their teeth.
Have you seen a blue crab? They have these limbs in the front with claws. I think that would be a decent defense. Also, they have a hard shell that might make it difficult to consume it.
They have "defensive postures" which alert others that they feel threatened.

I dont know. I read somewhere that they have mucus a ll over their bodies. That could make them slippery to predetors. (basking shark have super tiny teeth)
