Mold is a fungus, which reproduces through spores. It grows anywhere the spores land where there is nutrition (which all cheese has) and air. All mold needs air to live. (Water molds are not true molds.)

The trick to keeping cheese from getting moldy is to exclude air from the cheese, which cannot be done by wrapping with plastic wrap or other quick methods. Traditionally, the reason cheese has wax on it or has a hard, dry rind is to prevent mold from growing. For the home, keeping mold off is probably best done by scraping the cheese with a knife from time to time as it is used.

Of course some cheese is supposed to be moldy, and the mold spores are purposely put on such cheeses or into the milk they are made from.
