This is because the sand does not absorb the water it simply just drains. Whereas the soil soaks up the water. This allows the plants to get enough water to live. Two plants overcome this problem are bamboo and mangroves, because their roots are so dense.

It depends on the type of plant, its roots, the water and nutrients it needs and how the plant gets its nutrients.

Sand alone can not support plant life. Unlike topsoil, sand has few if any nutrients in it so either the plant need to get food elsewhere or it needs to send roots down below the sand till it reaches soil with nutrients. Also, sand is not heavy enough to hold down a plant by its roots unless the roots go down far enough.

If your are trying to grow plants in sand, you need to periodically add plant food and maintain moisture in the sand as the specific type of plant requires.
