How does the metal chalice used with sacramental wine prevent the spread of germs?

It is not so much what the chalice is made of as much as a collection of organic (carbon-containing) compounds found in both Red and White wine (although much higher in Red wine.) Researchers isolated and neutralized the various acids in wine and then they were able to identify an antibacterial compound which as able to kill 99.9 percent of dental and sore throat bacteria, even when it was used in far lower concentrations than found in wine.
