The pancreas is areally weird organ in the sense that it is part of the endocrine and exocrine systems. The pancreas makes "pancreatic juice," which is added to the bile to join the small intestine to help digest the food, e.g. proteins and fats.

My A-Level studies have focused more on the endocrine functions of the pancreas however, so I'll tell you what I know. Endocrine means "ductless gland." This menas that the secretions of the endocrine part of the pancreas go straight into the bloodstream. The Pancreas contains cells known as the Islets of Langerhans (sounds like something mythological i know!)

The islets measure the glucose levels of the blood. "Normal" blood sugar levels are around 90mg/ 100 cm3. If the blood sugar level drops, the alpha cells (of the islets) synthesise and release a hormone called glucagon. This makes the liver turn more glycogen into glucose, while decreasing respiration rate etc. Fats will also be encouraged to be broken down.

If Blood sugar levels go too high, i.e >90mg/100cm3 then the Beta cells of the islets would secrete one of the most famous hormones in the body- insulin. This increases respiration rate, forces glucose inside cells and makes more glucose convert into fats. If the Beta cells make no insulin or the insulin has no effect, several problems will occur as a result of Diabetes (type I and Type II respectively).
