Water vapor no longer carries impurities that were suspended within the liquid water, so when the water evaporates it leaves behind anything that was dissolved in it.

It should be noted, however, that this does not necessarily mean that all rainwater is pure water. The rain is still liquid water, and can pick up impurities as it moves through the air.

Well when the water goes up into the clouds, that's the only thing it takes- the water. so all the bits of rock and stuff stay down on the earth.

When the sun's rays warm the earth's surface, water evaporates and enters the atmosphere as vapor. As water enters the atmosphere, it leaves behind any chemicals that were dissolved in water. Even the salt dissolved in ocean water remains in the ocean. Only fresh water enters the atmosphere by evaporation. Water removed from the oceans, lakes, and soil by evaporation is returned to earth in the form of rain, snow, sleet, and hail.
