An employer goes back five years on a background check. That's the time it takes for your record to be removed via a pardon. You have to wait five years from the day of disposition to request a pardon and it is always granted. The five year waiting period starts the day you're released from prison or the day your sentenced if you received probation. For more info check this website out:

It depends on how important it is to that particular employer. You should pretty much always assume they will find out everything. Most employers are going to be more upset to dig up something far in your past than they would be if you told them about it up front.

No. Any employer (or anyone else who may wish to check) can go as far back as they wish (at least 'til your 18th birthday).
I am aware of no law in any state that limits the length of time an employer can go back into your criminal history (excluding your juvenile reord of course).
They can go as far back as they wish with the exception of certain items which can only be searched 7 years into the past those items are bankruptcies, tax liens, and judgments.
