Adult snapping turtles can stay under water for 40-50 minutes. I have a baby snapper and he stays under for about 10-15 minutes. I know he can hold his breath for longer but it is really just a choice thing. If a snapping turtle knows that a potential predator is near by then he may stay down for 20 minutes or more. If a baby snapper is comfortable with his environment then he may leave his head above water or come up every minute or so.
Baby red-eared sliders... well for starters, don't worry about them
drowning underwater. Just give them enough water so that
their head is above the water. As long as they have some rocks
on the side so that they can bask, you're good. =)

I have one and i read that as long as they have something to drink from above water they'll be fine and they can stay up outta water for about 1 hour to 2 hours at the max.

Well, in my experience my two male red- eared sliders get along pretty well. Sometimes they will fight for food.
