It is formally served at room temperature, so it has to sit out during the duration of the meal.

Although, it is up to you to decide wether you want it from the fridge or room temperature.

Some people actually enjoy from the fridge, as everybody is different. :)

DO NOT vacuum seal soft cheeses (brie, camembert, etc.) The low oxygen environment promotes the growth of deadly bacteria such as listeria and botulism.
