Whole coffee beans will stay fresh for months at a time as long as you take proper care to store them correctly. Keep them out of direct sunlight and in cooler temperatures. They should be stored in an air tight container.

The beans should appear bright and oily when fresh; if they appear dry and lackluster then they are probably past their prime- but can still be used to make coffee.

Tips for Storing Coffee?

You probably love your morning brew, and if barista style indulgences are too rich for your current budget, you may be struggling to recreate those rich flavors and aromas at home. If your grocery coffee beans start losing their favor soon after you get them out of the bag, we have some hints that will keep your beans (ground or whole), viable longer. The bitter aftertaste common to aging coffee beans can be a thing of the past if you take a couple of timely precautions:How to Store CoffeeCoffee beans can be persnickety. Sure, they're worth any effort necessary to keep them aromatic and flavorful, but your favorite brown beans have a lot of enemies. Moisture, heat and odor can all impact the way coffee beans or ground coffee will taste once brewed. That means it's important to maintain coffee in a controlled environment. You'll read any number of tips suggesting that a quick toss into the freezer will keep coffee beans fresh indefinitely. Unfortunately, that just isn't true. You know the funky smell frozen foods get after a month or so in the freezer? Coffee starts taking in the stale smell of the freezer or refrigerator almost immediately -- unless you take precautions. Coffee beans also need a cool, dark, low moisture location for storage of more than a couple of days. These tips will help you find or make the perfect spot for your coffee:• Keep coffee away from the stove and out of direct sunlight. It's also smart to store it away from exterior walls unless you have good insulation.• If you like your fresh brew but don't want to make a major production of storing it, place the beans in a plastic freezer bag and roll the bag to remove as much moisture as possible before sealing. If you have one of those desiccant packets that absorbs moisture, throw it in the bag too. You can also add some dry rice wrapped in a length of cheesecloth to remove residual moisture. Repeat the sealing process every time you open the bag.• Avoid buying more coffee than you'll use within two weeks or so unless you plan on prepping the beans for long term storage.• Storing coffee in the freezer for a month or more can be a good option for both whole and ground coffee beans, but only if you remove the air from the container before stowing it. This means investing in a sealer that will evacuate air from the bag or jar before fastening it. This seems like a nuisance, but it's important. The air surrounding the beans contains at least some humidity. Refrigerating or freezing a bag with air inside will cause the residual moisture to react unfavorably with the beans. After removing the coffee from frozen storage, don't refreeze it. Use it within a couple of weeks. If you have quite a bit of coffee to store, place it in multiple vacuum sealed packets.

How to Get an Even Grind For Your Morning Brew?

Not all coffee grinders are built alike. Perhaps the gourmet gear is less fallible, but chances are, there will be a coffee grinder at the top of the list that will still leave chunks of beans amidst a bed of fine grounds, just like a cheaper model. So, grab your favorite coffee beans and let’s head to the kitchen to get a pot brewing. First, you want to plug in your coffee grinder, and measure out a scant ¼ cup into the machine. Depending on the capacity of your machine, this may seem like too little, but unless you’re using a giant blender, start with small batches. One of the causes of large chunks left behind is that there is simply too much material to grind at one time. Next, press the lever on the grinder that starts the grinding process. In the coffee bean aficionado world, it is common knowledge that even the heat from a grind can zap some flavor out of the bean, so grind it first for a long spell, (about 5 seconds) and then pulse after that, until you see even grains. Then, in a wire-mesh strainer, pour the beans out over the coffee filter lined cup, or just over a small bowl. If the coffee doesn’t want to move, shake it until the only thing left are the coarser ground beans. Return the rejected half beans to the grinder, working in your next batch, and repeat these steps until you have enough coffee ground for a pot. Ahhhh! There’s nothing quite like a fresh brewed pot of coffee, and with a coffee grinder, you have the ability at your fingertips to make it as fresh as you can without growing the plant in your backyard.
