If you're doing it in a pit (Luau style or Cuban), and you've dressed the pig properly, I'd give solidly 24 hours. This depends entirely on how well you have built your pit, and what the temperature is where the pig is placed. You want the pig smoking around 220F-240F, roughly. If you're asking this question here, I strongly suggest you get someone who has a lot of experience in this process to show you exactly how. If you aren't Very experienced, you can easily poison your guests (if it's too cold) or ruin 200lbs of meat.

I would say 7-8 hours depending on the temperature. Ideally you want to cook pork around 200 degrees for a long slow time. A whole pig will be done when the shoulders and the butts have reached a temperature of at least 170-180 degrees. 180 degrees is the ideal temp for pork.

Roasting time on a 25lb pig takes as long as it has to to reach a internal temperature of 190 degrees. And the time also depends on the cooking temperature and cooking technique. sample: a barrel BBQ at a temperature of 275 degrees with a 25lb. pig might take approx. 10 to 12 hours.

Please say you are not cooking a GUINEA Pig... perhaps this question should be recategorized? I'll give it a shot.

well that depends on how you cook it. if its slow smoked it would take at least 2 full days at a very low temperature. i would say 200 degrees. if you cook it at a higher temperature the outside will be black and burnt and the inside will still be bloody and raw. when cooked slowly, the pig will develop a beautiful golden crust and the meat will be mouthwateringly tender. remember, low and slow is the trick
