Fold the button on top of the top, flat sides together and tie the pork loin halves together. Next in a hot pan with a small amount of olive oil in it. Sear the pork loin on all sides. Then transfer the pork loin to a 325 degree oven for 2.5 0- 3 hours for a 5-6# pork loin. roughly 30-40 minutes per pound or an internal temp of 170 degrees.
