∙ 13y agoThere is an excellent book out there called "Food For Fifty". It gives the amounts of everything that you would need to feed 50 people. Then you mulitply from there.
The book is expensive but still a must for caterers. There are some used ones available online that are probably earlier editions and only $6.
Later editions include newer foods, but in the case of salad - even the oldest editions will have the amounts.
