We do that because most experiments take place here on Earth, not the moon or Jupiter, where things weigh considerably less or more, respectively, than on Earth. Weighing something is the easiest way -- no pun intended -- to determine an object's mass.
So, the real answer to your question is not a statement but another question: On what planet? See, on Earth, one gram of air weighs one gram. But on Jupiter, a gram (mass) of air weighs considerably more, as do all things.
Now, if your question is What is the weight of one gram of air in ounces, well, that's another kettle of fish. And I have no idea how much a kettle of fish weighs. But one gram -- of anything -- is 0.0352739619 ounces.
By the way -- again, no pun intended -- many people use the Newton as the unit of weight, because the Newton is the SI unit of force, and weight is a special kind of force.
...Actually, if you took 1 gram worth of air, it would be about 3/4 of a liter. If you took a plastic bag, weighed it empty, then filled it with 3/4 of a liter of air and weighed it, then subtract the weight of the empty bag:

Why?
The air inside the bag is being held up by the buoyant force of the air outside the bag. They balance each other out.
If you had helium in the bag, the bag would obviously weigh less than empty and if you had water in the bag, it would obviously weigh more, but you may not know that there is a difference in the weight (force of the earth pulling down on the bag) because of the atmosphere surrounding the bag.
The weight of 1 liter of air depends on the composition of the air, the temperature, the pressure, and the gravitational field it is subject to.
As an example, let us assume air of composition:
79 mole% N2 (nitrogen)
20 mole% O2 (oxygen)
1 mole % Ar (argon)
This would give an average molecular weight of
0.79x28.01335 + 0.20x31.9988 + 0.01x39.948 = 28.930 or 28.930 g/mole
At 0 °C and 1 bar pressure 1 mole of gas occupies 22.4 liters, i.e. 22.4 liters/mole
hence we have 28.930/22.4 = 1.29 g/liter
At normal earth gravity this would weigh 0.0127 N (Newtons) or 0.00285 lbf or 0.0456 ounces.
I don't want to confuse you, but we never actually talk about a pound of air, even though
we do use those words. When you hear somebody say "pounds of air" ... like in the
tires on his car ... it almost always means "pounds per square inch", and that's pressure.
On or near the surface of the Earth, there are about 453.6 grams of anything in a
pound of it.
And another thing:
Air certainly does have weight. Don't let anybody tell you that it doesn't.
If you draw a little square in the dirt on the ground, 1 inch by 1 inch, then the weight
of all the air sitting on that little square, from the ground all the way up to space where
there isn't any more air, is around 14 pounds.

It means, weigh about 5 grams of NaCl, precisely, to the milligram. I don't really know how to make it much simpler than that. Maybe this will help. 5 grams is 5000 milligrams. The value you get for the sodium chloride you weigh out will probably be between 4900 and 51000 milligrams. Anywhere in that range is fine.
The mass of the balloon material plus the mass of the compressed gas within it. The fact that this might be less than the mass of atmospheric air which it displaces is of no consequence to this answer. But that will affect the result of any attempt to weigh it.
It is odd to encounter a "gallon" of silicon. This metalloid has a density of 2.329 grams per cubic centimeter, and since there are about 3785.412 cubic centimeters in a gallon, your gallon of silicon, which is a solid at room temperature, will weigh about 8816.22 grams. That's about 8.816 kilograms, and that's about 19.4 pounds.
