If each burrito is made with 2 ounces of beef then 600 ounces, or 37.5 lbs. of beef is needed. More is needed if more meat is used per burrito. Refried beans or frijole olla is often added as filler so less meat is used.
I prefer lean shredded or chopped beef over ground beef, but that is your choice. (95/5 ground beef should work well, otherwise increase the amounts as the beef fat reduces the usable amount.)
