In most airsoft wars and tournament at public airsoft fields, you have to be 12 and up and you need a waiver signed by one of your parents/legal guardians. If you are just going to have an airsoft war in your backyard with a couple of friends, you can be any age. You have to be 18 or older in most states to purchase an airsoft gun, however.
Most Tournaments allow 10 years of age to play. But usually it would be better to be in the 13 range.

In New York State (very strict about guns etc.) you need to be at least 18 years of age to purchase one and enter into any fields, that said, if you don't meet that age, you can still fire an airsoft gun, you just can't buy it. I hope that gives you a ballpark idea.
