You can eat them while they are still warm from the hen. Nothing tastes as fresh as a newly laid egg. Even one day in the fridge makes a difference so if you can get eggs laid the same day as you use them, by all means do so. Eating them boiled however can be problematic as the shell will not peel off without a lot of work, scooping them out with a spoon after boiling works fine.

about the time it takes you to get from the coop to the frying pan. There is no harm in eatting a fresh laid egg. The hen lays an egg that is protected from bacteria with a sort of liquid gel. If the egg is dirty wash it in luke warm water and then it it. Never use cold water to wash your eggs as this will draw the bacteria into the egg. other than that enjoy!! fresh laid eggs are the best!!

The sooner the better! However, for a hard boiled egg you need to wait two weeks for the proper consistency of the white. Also, an egg can remain viable for eating up to twelve days without refrigeration if it hasn't been exposed to extreme heat or cold just like a fertilized egg remains viable for cell division and growth for twelve days while the mother hen continues to lay her "clutch" (8-12 eggs) before she sits on them and begins their three week incubation. However , I would highly recommend either immediate consumption or refrigeration.

We have chickens and I have taken the eggs straight from the chicken, washed it off and cooked it. The fresher they are, the better they are going to taste.
