Add a little white wine and make fondue!
To add flavour. Similarly wine can be added.
Cheese fondue can be made with white wine or with chicken broth. I'm sure fondue made with chicken broth is fine as long as the cheese is processed (which most is for fondue). There is debate about whether or not the alcohol "cooks off" in the wine based fondue. I guess I think it is safer to stay away from.
The alcohol doesn't burn off--it evaporates. If the sauce is properly cooked (not just melted), most of the alcohol is gone by the time it is served. A traditional cheese fondue contains starch, so it needs to be cooked on the stove for at least 15 minutes before serving. Some people make cheese fondue without wine simply because they do not keep alcohol in the house on principle. Incidentally, did you know that freshly-baked yeast bread contains alcohol? No one wonders if that's ok for kids to eat.
A fondue is a dish usually consisting of a melted sauce (cheese, wine or chocolate) in which pieces of food, such as bread, meat, or fruit, are dipped or cooked.
A double burner: 2 pots. Fill one pot with some water. Put another pot (with 1. cheese- flower first so it won't stick 2. a base -beer, wine or vegie broth 3. whatever else you want in the cheese) on top. The steam from the water will make the upper pot hot and melt the cheese without burning it.
Fondue is a classic example. Just melt emmemtal and greuyere together with a dash of white wine & dip bread!
Fondue! A little bread, a little cheese, a little white wine, and a little heat.
