It's plain and simple. As the eruption comes to a beginning, the place where the eruption should occur gets highly elevated. If certain surface was a bit flat, it wouldn't be anymore.

Also, the vegetation and pretty much everything gets destroyed, but they say the volcanic earth can be useful sometimes.

Volcanic eruptions release a gas called CO2 or carbon dioxide. This gas is known to cause a greenhouse effect. The gas traps the heat from the earth creating an insulation around the planet. This warms the earth.

Another reason is the atmosphere haze. Volcanoes cause ash and sulfer-rich gases to fill the atmosphere. These clouds can circle the globe within weeks after the eruption. The gases absorb radiation and the ash blocks the sun rays. This cools the earth.

How can a volcanic eruption affect the sun?

A volcanic eruption here on Earth can not affect the Sun. However, a volcanic eruption here on Earth can put particles of ash and some volcanic gases into the atmosphere that affects the transparency of Earth's atmosphere to sunlight. With the ash content the skies near the volcano go dark during the day and with the gases (especially sulfur oxides) the amount of cloud cover increases causing sunlight to be reflected and the air to cool.
