Power brakes use engine vacuum to get their power. If the engine is out of tune, the loss of vacuum will cause it to run rough. Try changing the spark plugs.
I would say a vacumn leak. Check hoses, measure vacumn with running at idle and at idle when brakes applied. This assumes you have power brakes and it idles well without the brakes applied. Please make sure that the clutch is working properly... Does your clutch work properly?

Your car may fluctuate in idle while applying the brakes due to a problem in the computer. Everything in cars nowadays is regulated by the ECM(Electronic Control Module). A few simple diagnostics tests done by a certified tech can tell you what exactly the problem is. You may also have a bad power brake vacuum booster, this would effect the engine idle when the brakes are applied.

a couple of things. 1: does it drive good doesnt stumble when driving if not the carby might be flooding..... 2: if it runs great and only dies when the brakes are applied, does it idle rough then die, it might be the brake booster. maybe your tcc solenoid, which is in the transmission. my 84 montecarlo did that with a new carb
When the idle goes rough, you must idle the plugs. Else the car plugs roughly.
