There is no way to assure gender in fertilized eggs, much to the concern of the major hatcheries as they would clearly love to produce ONLY hens. Cockerels are not nearly as in demand as hens and if they could, they would be very selective in the hatch. Having the incubation heat too high will however produce a higher than normal male to female ratio as the males can survive higher temperatures when in development. It does not work in the opposite direction however. Lower temperatures in the incubator just slows hatch and does not effect gender viability.

I have ducks and the momma duck just hatched out her eggs and after the first one hatched it was about 2-3 days later they were all done, but you need to watch them close because sometimes they can't get out of the shell so you will need to help the duckling, just keep a close eye on the eggs and they should be ok.
