If you've followed the recipe using egg whites instead of whole eggs, the difference should be that you have a white cake instead of a yellow cake. When using a recipe calling for whole eggs and you wish to use just the whites, add one more egg than the recipe calls for to make up for the liquid of the yolks not used.

No, something will not happen to a white chocolate cake. It will turn brown and golden as a sign that it's done, but other than that, no. You have to make the cake right though, otherwise it will not taste right.

Yes, you can color white chocolate with food coloring. It's best not to use coloring that is water based, though. Chocolate does not like water and you may have a problem with it seizing up and becoming unmanageable. Recommend the Wilton candy colors at Candyland Crafts for this job. Adding cocoa to a white cake mix will give the cake some degree of chocolate flavor. One should reduce the amount of flour in the cake by the amount of cocoa powder added. However, it will not quite be "chocolate cake" which is made with melted Baking Chocolate.
