Because of the way English saddles are made it makes for more contact between the horse and rider. The gaits of an English horse are different than the Western type. English riders trot not jog and canter instead of loping. The English rider will post at the trot or sometimes called the rising trot. The rider is up in the saddle with the horse's outside leg and shoulder. English riding is the safest way to jump fences and gives the horse and rider the freedom of movement needed to navigate a jumping course. When done correctly, English riding is beautiful to watch.
This all depends on the size of the horse, the type of discipline, and if the rider feels comfortable or not.

It depends on the type of horse you are talking about. A normal, everyday sort of breed then they would have 4 gaits, walk trot canter and gallop. Some breeds have more than four gaits. For example, the Standardbred can pace, the Tennessee Walker has a running walk, etc. This gaits are unique to their specific breeds. Within each gait, there are variations, especially for a dressage horse. These are extended, collected, working, and medium. However, these are variations and NOT gaits. A gait is defined by a unique footfall. Variations, on the other hand, take place within a gait and have to do with the speed of the gait and the collection of the horse.
Arabian horses have only the basic gaits of most other breeds. they do not have 'easy' gaits like those of 'gaited' horses. Arabians have the ability to walk, trot, canter, and gallop.
Regardless of the type of race, whether it be barrel, flag or pole bending, I would recomend training your horse firstly at the trot to alow the horse to learn the correct pattern needed for the particular competition. Once the horse has mastered this at the trot, begin schooling at the canter, once mastered, the gallop.

These are called the slow-gait and the Rack. Paso Fino and Peruvian Paso horses perform the Paso, the Quarto, and the Largo as part of their gaits. These are laterally moving trot like gaits that are very smooth to ride. If you aren't being specific to the breed of horse you would simply call it high stepping. You may be thinking of the word "canter" which is often used by the untrained to describe a high stepping horse, but that word actually has a specific meaning that goes beyond high stepping. A canter being a specific type of 3 beat step with a speed between walking and gallop.
