In the Holocaust, why didn't the Jews say they were Christian?

Most European countries had (and still have) state churches. Some portion of every taxpayer's taxes go to pay for that church. By the 20th century, countries with sizable religious minorities began to recognize the value of religious diversity, and they offered state support to other churches. Germany, in particular, has large Protestant and Catholic communities, and Poland had large Catholic and Jewish communities. In those countries, the tax records contained, for each taxpayer, which state-funded religion got that taxpayer's church tax. The net result: The Nazis could simply look at the tax records to find the religion of each taxpayer. When the Germans invaded the Netherlands, the Dutch had a squad in charge of destroying those records, but the SS knew the importance of capturing those records and got there first.
