Episode 4 and 5, then 1 and 2 and 3 and then 6. 4 and 5 set up the "father" reveal 1-3 provide the back story 6 brings it full circle.

... and of course after that you would watch Star Wars: The Force Awakens. If you don't watch the others before that, the 2015 film won't make as much sense.

From a storyline perspective, you should watch them 1, 2, 3, 4, 5, 6, 7.

However, the order they were released is 4, 5, 6 then 1, 2, 3 and then 7. So, if you are a film nerd and want to see the different ways that the films developed, you can watch them in that order.
