To answer this simply, "Yes". Prince of Persia is a better series than Assassin's Creed for a number of reasons.
The first reason when comparing the two games should be what they both have the most in common, the fighting. Now I'm heard people try to say that AC has better weapons than PoP has, but this actually isn't true. In the first game you're stuck with a dagger and a sword, but if that's what keeps your hands tied, I would suggest playing Warrior Within (the first sequel to the Sands of Time). In PoP:WW you get an enormous variety of weapons where any sand creature that you kill (and entire castles worth) drops a weapon. This means that there is a huge number of knives, swords, axes, and mases of different designs that you can pick up and fight with, or even throw at other enemies if you want to. Nothing says "I'm here for business" like throwing a 9lb mase a someone's head.
The second thing that the games have in common is the agility factor. In both games you'll be climbing up walls and all over the place in order to accomplish your goals. AC is an open range as it takes place in an entire city while PoP has a more linear game play. Many people think that this is a disadvantage for PoP, but it's actually the game's greatest strength. Yeah you can't go anywhere you want at the spur of a moment, but your path is layered with spikes shooting out the floor, blades on tracks slicing down the length of hallways, spinning pillars with swords sticking out of them on corners ready to take you down to size. What AC seems to forget is that it's not the destination it's the journey, and going through traps and puzzles to get to where your going instead of climbing over rooftops and taking short cuts, seems more fun to me.
The third point, and the final one I'm going to make, is that Assassin's Creed was actually originally supposed to be a Prince of Persia game called Prince of Persia: Assassins. This was separated into a different game when they realized that the player would be playing an assassin protecting a prince with special powers instead of being the prince himself. It's not really a Prince of Persia game if you're not playing a prince.
In closing the Prince of Persia did it first and better, because it forces the player to think on their feet with puzzles as well as excellent fight mechanics and story telling. I've heard one or two people talk about liking AC better because of the stealth play, but is there a single person out there that can tell me the name of the prince from the Sands of Time game series (any of the three games)? The answer to this is no, because he never gives his real name even once. Who's more sneaky now?
